Hey there everybody,

This is week 10 in my 12 week cycle. I took a few weeks off. It was a busy couple weeks with birthdays and sick children. I have also started planning breakfast. The kids need to start eating a better breakfast so that they are not so hungry an hour after we eat. I am also hoping that it will help Alex behave better at school. Even though this is the first week that I am planning breakfast, I am going to keep dinner and breakfast on the same week, so I don’t get too confused.

  1. That is such a great idea to plan breakfasts. I get in ruts and make variations of the same thing until it gets boring. Lately it’s been waffles that are gluten, dairy and egg free due to food allergies. I also don’t eat soy by choice.

    How do you make the pancakes without eggs? Are they held together with tapioca or olive oil?

    I make pancakes using heart healthy bisquick. It does not have any dairy or soy in it. I do use egg however. Neither one of my kids are allergic to eggs and since it is one of the only ways that I can get any protien in them I take full advantage of it. I did however find this pancake recipe in one of my cookbooks.

    1 cup GF flour
    1/2 tbsp. cane sugar
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 tsp. baking soda
    1/2 tsp. ground cinnamon
    1 cup organic milk substitute
    1 tbsp. applesauce or pearsauce
    2 tbsp. safflower, almond, or avocado oil.

    in a medium mixing bowl, stir together flour, sugar, baking powder, salt, baking soda and cinnamon. In a seperate bowl whisk together milk, applesauce, and oil. Add milk mixture to flour mixture all at once. Stir with a rubber spatula until just blended. If batter is too thick, thin with milk substitute. Heat a large nonstick skillet over medium heat. Lightly grease skillet with cooking spray.
